While Paul Vunak has made a “career” of biting people ( LOL) and is one of the few that can probably make it work for him, he also has a SLEW of other things he can do, not to mention a solid grappling background.

Not taking sides here, but being armed is about as big an advantage on the people who took wrestling as those who didn’t, and is the best form of defense, imo. A wrestling class, like any empty hand combat, is about the least efficient way to learn to defend one’s self from the kind of threats you are talking about.
Now, since Uki seems to be from the renaissance fair crowd, odds are astronomically good that he carries live steel of some form even at inappropriate times, which, ironically, makes him pretty darn safe compared to the guy hoping to wrestle, punch, or even bite his way out of danger, all of whom would be wise to avoid fighting an armed man unarmed.
Remember, humans with weapons rule the world, humans without get ruled.

If someone is truly interested in self protection and the protection of others then edged and impact weapons, along with firearms, training is crucial.
How do I avoid the heavy hit when I’m closing to grapple?
A few ways: lead in with a punch. Jab or lead hook are good.
Now if the opponent redirects it that’s ok, the punch is mainly just to close the space between you and the person you are sparring with. Follow the punch in for a clinch. From the clinch work to get a stronger position. Depending on the rules of the match you may, or may not, have to watch out for knees at this point. However, now that you have got past the punches, knees or not, you are in a position to apply grappling techniques.
Allternate way to avoid the heavy hit:
Hang back a bit and wait for it. When the striker throws attempt to redirect and flank.
by the way i never said biting was the best or only way to help negate a grappler, it is merely a way to the means of that end… just as clawing, gouging, ripping, tearing, and mutilating exposed limbs and skin. hands are weapons… it’s better to discover all the ones they can turn into.

I don’t think throwing a hissy fit qualifies as a valid defensive posture.
Usually, that will just get you choked out faster.
Probably in ones best interest to actually learn real counters as opposed to guessing at what might work.
But this has been said several times here already.
