Kind of OT: Can you copy and paste text from PDFs?

I’ve bought some martial arts ebooks off eBay. Most of its crap, but there is some good stuff in it. I’d like to copy and paste the good stuff into one word document for reference. Can I do this?

It’s got loads of ebooks on this CD - one of thems ‘How to be a Ninja’ by the infamous Ashida Kim :slight_smile:
