how many systems/styles of praying mantis have the mantis stances done with the front foot hooked?

As in a 7* stance? Maybe I am just misunderstanding you...
If that is what you meant,...7* stance,...we do that;but it depends upon the form & application of course.

It could be the very Same BeiTangLang. The stance is known as mantis, tiger, tiger head and sometimes seven star. I have read a book on seven star by Leung Ting and it shows the seven star stance to be more like a cat or False leg stance. Yet I have heard other people call the "hooked" stance seven star also.

The stance is used for trapping or hooking around the opponents leg for applying pressure or sweeping / kicking to take the balance away from your opponent. There are numerous applications for the stance.
